Jackson rose to fame in 1980 when he was signed by the South Sydney Rabbitohs. He played for the Rabbitohs for three seasons before moving to the Canterbury-Bankstown Bulldogs.

In 1989, Jackson retired from rugby league to pursue a career in boxing. He quickly became known for his flamboyant personality and showmanship in the ring. Jackson won his first professional boxing match in 1989 and went on to win three of his four professional boxing matches.

After retiring from boxing, Jackson turned to acting. He is perhaps best known for his role as "Zach" in the 1990s action-adventure television series "The Highwayman." Jackson has also appeared in several films, including "Bloodfist IV: Die Trying" and "The Nostradamus Kid."
